Lechon Baboy

Lechon baboy is the big treat for the Christmas feast.

We purchasd a local pig and roasted it over the coals and everyone had a good time singing, drinking and eating the baboy.

I am not a huge fan of pork but Filipinos absolutely love the stuff! The baked skin, panit han baboy, is considered a delicacy.

I had ordered the pig a few weeks in advance but somehow the price jumped upwards by 500 pesos, foreigner tax.

We cooked up a big pot of spaghetti and rice and the party went on all night. Singers and guitarists seemed to emerge from the shadows and it was really a nice Christmas (2008).

ps My girl insisted that we include the part about me falling in the ditch when I went outside to relieve myself.
